roasted sweet potato skewers with cilantro-jalapeno aioli dip

The harvest is almost upon us wich means an influx of squash, apples, pumpkins and my favorite sweet potatoes. Give them to me baked, fried or puree – I cannot get enough! This recipe from Rx for Foodies (click for recipe) gives an interesting new twist on a classic. Top it off with a zesty, refreshing dipping sauce like the cilantro-jalapeno aioli and you’ve got me!
